This is the original, which I pretty much love to death. I can imitate his Norwegian accent quite well, provided that I grin like a maniacal rabbit (as does Alexander Rybak)

Well, if it's for technical reproduction, Faith No More always impressed with their covers ("Easy" Commodores , "I Started a Joke" Bee Gees) but if you're talking about less strictly performance based my pick would be Blind Melon's version of "The Pusher" by Steppenwolf.

For the record, I LOVE Rage Against the Machine but they do very bad covers. And I'll give a shout out to A Perfect Circle for putting 'Imagine' into a minor key and totally changing the music around it. It's not great, but it's daring.

I'm assuming no one will search out any of those, but if you do want to try one, Faith No More doing I Started a Joke live would be my suggestion. FNM were a crazy good band.
